Who Is Merlo Coffee?
Merlo Coffee has been roasting in Brisbane since 1992 — long before "specialty coffee" became a buzzword and before every suburb had a third-wave pour-over bar. Founded by Demi Merlo in Fortitude Valley, the company has spent three decades building something rare in Australian hospitality: a local roaster with genuine global sourcing reach and a fanatical commitment to consistency.
Merlo sources green beans from farms across Ethiopia, Colombia, Brazil, Guatemala, and Indonesia, developing relationships directly with growers rather than buying through brokers. That direct sourcing model means traceability, better quality control at origin, and a cup that reflects where the coffee actually came from — not just where it was blended.
Today Merlo operates from a purpose-built roastery in Brisbane's inner north, supplying hundreds of cafes across Queensland and beyond. They're not a national chain, not a multinational corporation. When we were planning MK Bower, we cupped — that's industry speak for taste-testing — beans from half a dozen roasters. We looked at Melbourne roasters, Sydney roasters, and a few emerging local names. Merlo won, and it wasn't particularly close.
- Consistency across seasons — Coffee beans change with harvest. Merlo's blending team adjusts their roast profiles each season so the cup tastes the same in July as it does in January. That reliability is everything in a busy café kitchen.
- Brisbane-roasted and fast to us — Freshness matters enormously with espresso. Because Merlo roasts locally, we receive beans within days of the roast date — not weeks into a shipping container. The difference in the cup is real and immediate.

What Blends Do We Use?
We use Merlo's premium espresso blend as our house — a classic, approachable coffee with notes of dark chocolate, hazelnut, and a clean, sweet finish that works beautifully as a short black and holds its character through milk. It's a blend designed for Australian palates: not too acidic, not too bitter, with that rounded body that makes a second cup feel entirely necessary.
For our batch brew and cold brew options, we rotate through Merlo's single-origin offerings depending on what's in season. These coffees tend to be brighter and more fruit-forward — great for customers who want to taste coffee as an ingredient rather than just a morning delivery mechanism.
First timer? Start with a flat white — it shows off Merlo's blend at its best. If you like black coffee, ask for a long black with a side of warm water; our baristas pull it at the right temperature and ratio. Cold brew fans, ask what's on rotation — we usually have something interesting.

We've got you covered. All of our Merlo-based drinks are available with oat milk, almond milk, soy, or full-cream dairy. Our baristas are experienced with alternative milks and steam them to the same standard as regular milk — no flat, watery texture or awkward splits.
We also stock Merlo's Swiss Water Process decaf for customers who want the full Bower coffee experience without the caffeine. It punches well above what most people expect from decaf — if you're pregnant, sensitive to caffeine, or just prefer an afternoon coffee that won't affect your sleep, it's genuinely worth ordering.
